what is suis generis? it means from nothing - or one of a kind. it is what we do every week. we have created new and unique menus each week since march of 2012. people say this is crazy. it may be. however, we are energized by creativity - by ingredients & concepts. we cook because we love food, and we have a passion for experimentation. we call it food evolution.
what is food evolution? amazing food starts with excellent ingredients. we call our approach "food evolution" because our menu evolves weekly as new fresh ingredients arrive. we also try to keep our prices reasonable because we are first and foremost a restaurant for the residents of bywater. while our food costs are high, we make-up the difference with very little spoilage. we buy food in small increments, create unusual menus & use seasonal items from our very own tiki farm to create the next round of dishes... this is food evolution. by this process, we bring you a constantly changing menu based on fresh local and exotic imported ingredients.
we have our own farm! over the years, we found that passively purchasing what was available was not enough to feed our creativity. then we found it...a beautiful property on the water in pearlington, ms, where we now grow a baffling array of exotic herbs, produce, fruit & edible flowers. plus, we strive to be new orleans' first zero waste restaurant - for example, all veggie scraps are used as farm compost, so we create the dirt in which we grow the food on your plate!!
